Ponte Family Estate Winery Executive Chef Steve Stawinski has prepared a sumptuous series of menus especially for the Smooth Jazz & Music Festival this year:
Friday dinner menu
Salads
> Baby greens with dried cranberries, crumbled Feta, candied walnuts, and balsamic vinaigrette
> Hearts of Romaine topped with roasted peppers julienne, anchovy fillet, pink peppercorns, and pesto buttermilk dressing
> Poached calamari with sweet pepper and red onion julienne, and tomato/basil vinaigrette
Entrée
> Carved Kobe-style roast top round of beef with savory thyme jus and zesty horseradish cream
> Chicken Briage (tender breast stuffed with Brie cheese, dried apples, and golden raisins, baked and finished with an orange/honey glace and toasted almonds
Sides
> Asiago-spinach mashed potatoes
> Wild rice with crimini mushrooms & hazelnuts

> Medallion of monkfish grilled in butter and white wine with a roasted tomato stack and a smoked-mozzarella/saffron bechamel sauce

> Poached pear salad (Crisp frisee and red endive greens, shaved aged Gouda, shredded radicchio, golden raisins, caramelized walnuts with a chef-prepared, sweet dried-cherry vinaigrette)
